“family business” Rino Sottimano calls his winery smiling. This vineyard is today one of the best individual sites in the Barbaresco area and Sottimano’s most famous wine: Cottà.
You could call the Sottimanos modern traditionalists. Son Andrea, who now rules in the cellar, pays attention to a slow, careful malolactic fermentation and lets the wines mature up to one year on the fine yeast. Then the wines mature 18-24 months in neutral barriques. After ageing, the wine is bottled without filtration and other fining.
The wines convince by their fine fruity, elegant, subtle and yet hearty character.
Through this respect for nature in the vineyards, which are all cultivated the same way, and only minimal interventions in the winemaking process, Sottimano’s philosophy is to let the vineyards speak in the wine, “because often already 200 meters make a difference”
